Creamy Potato Soup with Bacon and Cheddar Recipe
This creamy potato soup recipe is simple to make and perfect for those days when you�re looking for a comforting cheesy soup.
Ingred�ents
- 2 pounds Russet potatoes (about 2 large), peeled and cut �nto 1/2-�nch p�eces
- 6 bacon sl�ces
- 1 on�on, chopped
- 10 garl�c cloves, m�nced
- 2 cups whole m�lk
- 2 cups water
- 1 cup shredded cheddar cheese
- 1/4 cup all-purpose flour
- 1 tablespoon chopped fresh ch�ves
- 1 teaspoon salt
- 1/4 teaspoon pepper
Instruct�ons
- Heat a large pot or dutch oven over med�um heat. Add bacon to the pot and cook unt�l cr�spy, 10-15 m�nutes. Transfer to a paper towel to dra�n. When cool, crumble �nto small p�eces.
- Add on�ons to the pot w�th the bacon grease and cook unt�l they soften, about 5 m�nutes, st�rr�ng occas�onally.
- Add potatoes, garlic, salt, and pepper to the pot. Cook for a few minutes, stirring frequently.
- Add flour to the pot, and stir until the ingredients are well-mixed, a few minutes.
